Is it difficult to open a bakery-confectionery? How to open a mini-confectionery.

For many people who want to invest in their own business, opening a pastry bakery will be the best solution. Despite fierce competition in this segment, with a competent marketing strategy, you can take a strong position in the market and reach a good profit. In this article, we present a detailed business plan for a confectionery bakery, where we will justify the feasibility of the project, calculate the payback period and profitability.

Even a mini-bakery can bring a stable income of 80-200 thousand rubles a month. This type of entrepreneurial activity is attractive, first of all, by the stability of demand. Despite fierce competition, this niche is not completely filled, and with quality products, a large assortment and well-established sales channels, you can count on success.

Against the backdrop of large players who present bakery products in a very meager assortment, mini-bakeries respond faster to seasonal customer preferences, trends in the culinary world, etc.

Why write a business plan?

Many novice entrepreneurs make a very common mistake and start a project without a thorough market study, analysis of the competitive environment, drawing up a production and financial plan.

This threatens with serious financial costs and maximizes the risk. If we talk about the business related to the production of bakery products, then for many novice businessmen it may seem simple. The production technology itself, distribution channels are all simple and understandable even for novice entrepreneurs. But do not forget about the weaknesses of the project, about its risks, which can cause serious damage to the business.

With a competent business organization, with a well-developed marketing strategy, you can quickly reach payback and good profit. And the lack of weaknesses, ignoring strong competitors, on the contrary, will lead to losses and business closure.

Project Summary

The section reflects the relevance of the business idea and the feasibility of doing business in this direction.

The aim of the project is to open a confectionery in the city, which has a population of about 300,000 people.

The advantage of this business idea is a very wide target audience, which can be further expanded by offering confectionery products for different population groups.

The main advantages of a mini bakery are:

  • wide demand for the product;
  • demand stability;
  • wide target audience;
  • high profits in the long term;
  • opportunity to develop business and offer related services;
  • business profitability of 20-30%.

Flaws:

  • high competition;
  • dependence on external factors;
  • perishable goods.

This type of business is characterized by a wide and stable demand.

Depending on the business format, you can count on a profit of 100-200 thousand rubles per month. But, given the small investment, this article will focus on mini-bakery, where the main focus in the assortment is on baking confectionery.

Regardless of the season, holidays, etc., people consume a large number of goods in this segment, which is an undoubted advantage. But do not forget about the weaknesses of the project.

The short period for the sale of goods necessitates clear sales forecasts, otherwise a large number of products will need to be disposed of. Advertising, creation of a loyalty program, quality service and a wide range of additional services will help mitigate these risks and reach a good stable income.

Market analysis

Despite the great competition in the confectionery market, it should be noted that there is a great demand for this product. Especially demand for services and goods of this segment occurs during the holidays.

It is also necessary to note the lack of seasonality in the bakery business? Among other services and goods, baking and sale of confectionery today is one of the most promising. With proper planning and development of the company, it is possible to reach a profitability of 20-30% in a short time and get a good profit.

Before proceeding with the implementation of the project, it is necessary to determine the format of the business. This directly depends on the size of the city. The format will determine the target audience, the general concept of the store, its stylistic direction and design.

You can implement a business idea in two directions:

  • independent opening of a bakery;
  • buying a franchise.

In the first case, you will have to think over the name of the company, promote its services, conquer the market from scratch. In the second case, spending on advertising will be minimal. Since you will work with an already promoted brand, recognizable and loved by customers.

Each of these two options has its pros and cons. So, for example, buying a franchise completely deprives you of freedom. You will have to use the entire assortment, recipe, branded packaging strictly according to the contract.

One of the first steps in studying the competitive environment is to identify the main players in the market. Carefully study their products, distribution channels, pricing policy. This will allow you to form an idea in which direction to move.

Great emphasis should be placed on the correct definition of the target audience, the formation of a pricing policy and the development of marketing activities to increase sales.

To analyze the competitive environment and determine your own strengths and weaknesses, it is advisable to conduct a SWOT analysis and identify the pros and cons of the project, threats and development opportunities.

SWOT analysis

Possibilities:

  • business development and opening of additional confectioneries;
  • high profitability;
  • a possible increase in demand in general;
  • the possibility of providing additional services.
  • high competition;
  • short shelf life of products;
  • possible problems with suppliers of raw materials.

Strengths:

  • high qualification of personnel;
  • wide demand;
  • lack of seasonality;
  • availability of services;
  • quality service;
  • effective advertising.

Weak sides:

  • possible miscalculations in relation to demand for products;
  • lack of experience in this area of business.

Pricing policy development

When determining the pricing of your products, you should rely on the format of the business and the target audience.

Too high a margin on confectionery should not be done because of the huge competition and short shelf life. Only a company that occupies a leading position in the market and offers branded products that are qualitatively different from competitors can afford a high price tag.

Bakery services

The line of business for opening a confectionery bakery can be implemented in several ways:

  • a small bakery for the production of buns;
  • mini bakery with a point of sale;
  • own workshop for the production of confectionery with a small shop and cafe.

The best option for a small business is its own workshop with a direct point of sale.

As an expansion of the range of services and strengthening of competitive advantages, it is possible to implement the service of targeted delivery of products.

The range of products can be very wide:

  • croissants;
  • bread with various additives;
  • pies and buns;
  • cakes;
  • dietary bread and crackers;
  • cream cakes;
  • cookies, waffles, gingerbread.

organizational plan

In order to properly implement the project and successfully enter the market for the production and sale of confectionery products, the following steps must be completed step by step:

  1. Register a business.
  2. Find a room and sign a lease.
  3. Purchase commercial equipment.
  4. Hire staff.
  5. Develop a marketing strategy and a way to promote services.

Registration and paperwork

To open a bakery, an entrepreneur needs not only to register with the Tax Inspectorate and the Pension Fund, but also to obtain permits from Rospotrebnadzor and Fire Supervision.

At the very beginning of this stage, there will be a question about the choice of legal form. To implement a mini-bakery, you will have to choose between an individual entrepreneur and an LLC.

It is also necessary to correctly register the codes in the registration documents.

To launch a mini-bakery project, 55.30 "Activity of restaurants and cafes" should be registered as the main code.

It regulates activities related to the production of food products and their sale directly at the place of manufacture. Other codes can also be added, but this one must be specified as a key.

After submitting documents for opening an IP, it is necessary to resolve the issue of taxation. The best solution would be to choose UTII, but it is not available in every region.

In addition to registration documents that allow you to carry out business activities, you will also have to draw up a lot of permits for equipment, premises, and staff.

Given the specifics of the business project, you need to be prepared for constant checks by the sanitary services.

So, to open a bakery you need:

  1. Submit documents for registration as an individual entrepreneur.
  2. Select and equip the premises in accordance with the requirements of state inspections, make it safe for employees and visitors.
  3. Obtain permission to open in Pozhnadzor and Rospotrebnadzor.

Also from additional documentation you will need:

  1. Conclusion of the SES on compliance (sanitary and epidemiological expertise);
  2. Book of complaints and suggestions;
  3. Waybills (TORG-12);
  4. Lease agreement.

To work, you will need to purchase a cash register and keep a cash register. It will take you 2 to 3 business days to process your application.

The choice of products for launching a bakery and selling confectionery products should be approached very carefully. From this, in many respects, the success of the business will depend.

If you have chosen a business option with the purchase of a franchise, then a consultant from the franchisor company will help you choose the right premises and arrange it. This is one of the benefits of running a franchise.

If you open a bakery yourself, then when choosing a room, you should consider the following nuances:

  • patency of the place;
  • transport accessibility;
  • rental price;
  • long-term lease;
  • the possibility of rental holidays;
  • Are utility bills included in the rent?
  • permission to repair and redevelop the premises;
  • permission to place outdoor advertising.

You should not open a pastry shop near fitness rooms, sports clubs. But the neighborhood with children's entertainment and educational institutions will contribute to a good client flow.

The size of the premises and its style largely depend on the chosen business format. It should not be a basement, water should be brought into the room, a ventilation system should be equipped.

The ideal option is a room with large glass showcases, which will allow you to display demonstration products on display, attracting customers. Also, if you plan, in addition to the direct sale of products, to equip a mini cafe where customers can enjoy fresh pastries with a cup of coffee, you need to rent a room in which you will set up 3-4 tables.

In addition to the client room and sales counter, it is necessary to think over the production part. Depending on the chosen business concept, this zone can be open or closed.

The advantage will be the presence of a back entrance, where it will be possible to transport equipment, raw materials, without disturbing customers.

If you decide to implement a business project not only in production, but also in the sale of confectionery at the same time, then the place should be with good traffic. In a big city, consider options near the metro, educational institutions, large shopping centers.

Repair costs vary depending on the chosen style and concept of the project. Minimum - it is necessary to whitewash the walls and ceilings, tile the floor. Be sure to include these costs in the section of the financial plan, calculating the payback of the project.

The purchase of equipment will be the largest expense item. At the same time, the quality of products and the final result directly depend on the quality and manufacturability of the equipment.

To minimize initial costs, you can consider buying used equipment.

Here we present a business plan that aims to produce and sell our own products locally.

This necessitates the purchase of two types of equipment:

  1. For the direct production of confectionery.
  2. For the sale of products.

The production type of equipment includes:

  • bake;
  • mixer;
  • closet;
  • hearth leaf;
  • table for cutting dough;
  • baking trolley;
  • flour sifter.

The average check for the purchase of this list of equipment is about 1 million rubles.

To sell products, you will need:

  • cooling chamber;
  • thermal showcase;
  • cash machine;
  • safe or cash box;
  • seller's table;
  • racks for product storage.

If the business format provides for a mini cafe on site, then it is necessary to purchase furniture for visitors:

  • tables (3 pieces);
  • sofa (2 pieces);
  • air conditioner;
  • chairs (10 pieces;
  • mirror;
  • hanger.

Issues related to the purchase of raw materials play an important role in the implementation of this project. Pay great attention to the quality of raw materials, the reliability of suppliers, the price and delivery time of products.

You can search for partners via the Internet. This is a long and painstaking job. You should not immediately order all the goods from one supplier. In the first months, it will be advisable to work with 3-5 suppliers at once. Although this approach will require additional time and effort, it will allow you to determine the best supplier with whom you can subsequently conclude a contract and ask for an additional discount.

It is necessary to conclude a verbal agreement on deliveries with suppliers at the planning stage, so that there are no time delays later.

Do not forget that in addition to the supply of basic products, you need to take care of the purchase of packaging products.

The profit and success of promoting services on the market largely depend on the right staff. Depending on the scale of the business, you may need a different composition and number of employees.

The staff must include:

  • confectioner;
  • baker (2 people per shift)
  • technologist;
  • seller (2 people);
  • director (accountant);
  • sales manager;
  • cleaning woman.

To minimize costs under the “Salary” expense item, you can attract an accountant from a third-party organization, paying for piece work when submitting reports to the tax service.

It is advisable to make the work schedule of the bakery around the clock, taking into account the specifics of the business. To do this, you need to hire sellers and bakers in double quantity. Be very careful with the selection of sellers.

In addition to communication skills and a pleasant appearance, they must be well versed in the psychology of the buyer, be able to offer goods.

Video. Business idea for opening a bakery

In accordance with the business format and target audience, it is necessary to develop competitive advantages and a marketing strategy for the bakery.

In order to compare favorably with competitors, it is necessary to think over your own corporate identity, focus on packaging, service. You can come up with creative services that will be provided only in your mini-bakery (personalized congratulations on a cake or pastries, home delivery, baked goods to order, etc.)

Promotion of services and goods

The main channels for product promotion will be direct sales and outdoor advertising.

For active promotion of products, it is necessary to think over a loyalty program, all kinds of promotions, discount savings cards for regular customers. This will increase sales and create a base of regular customers.

Pay attention to outdoor advertising. This is due to the fact that people very often buy confectionery on impulse. A colorful sign, a bright original exterior, outdoor advertising and a pointer will help increase sales.

A few weeks before the opening of the bakery and the launch of production, you can organize a large-scale advertising campaign, and make the opening day a holiday. To loudly announce your entry into the market, decorate the store with balloons, arrange contests, promotional sales.

"Word of mouth" will work only 6-8 months after the launch of the project, but for this you need to take care of the company's reputation, your own corporate identity.

An excellent marketing ploy would be the creation of your own corporate identity, the development of gift packaging. Given the fierce competition in this segment, this will allow you to stand out from other pastry shops. In addition, current trends require a creative approach to the design of not only the products themselves, but also their packaging.

Don't forget that for this "trick" to work for you, you must pay great attention to the reputation of the company. The reputation of the company consists of high-quality personnel, a wide range of services, prompt service, and an optimal ratio of price and quality.

As mentioned above, for a franchise business, the advertising budget can be minimal.

Financial plan

Depending on the business format, from 50 to 100 kg of products can be sold daily. It is difficult to talk about the exact amount of daily revenue, as much depends on the product range.

The average check of one client will be 100 rubles.

Initial:

  • repair - 100 thousand rubles;
  • purchase of commercial equipment - 900 thousand rubles;
  • business registration - 3 thousand;
  • advertising for the opening - 10 thousand;
  • purchase of goods - 50 thousand

TOTAL: 1063 thousand rubles

Permanent:

  • staff salary - 70 thousand;
  • rent of premises - 20 thousand;
  • utilities - 15 thousand;
  • purchase of goods - 60 thousand;
  • additional expenses - 30 thousand.

TOTAL: 195 thousand rubles

The average payback period, with a properly developed plan and its strict adherence, is 4-5 months.

The main advantage will be the direct sale of their own products. In addition, you can develop your business by establishing partnerships, entering into an agreement for wholesale deliveries to supermarkets, confectionery cities, etc.

Conclusion

As you can see, the process of implementing a business idea for opening a pastry bakery is quite simple.

The main thing is to clearly follow the developed plan and take into account all the weaknesses of the project.

In order to minimize risks at the first stage of project launch, follow these simple tips:

  • think over the assortment and highlight branded positions;
  • start with baking 8-10 positions;
  • focus on the target audience;
  • do not start production with large batches.

Video. Opening your own bakery

Not so long ago, in order to stand out from the competition, it was necessary to surprise customers with something special. Now frozen cakes and cakes (deep-frozen) are in the production fashion. This is because they look quite beautiful and are able to amaze with their variety of color shades. In large supermarkets, you can see that such products were not brought from the nearest confectionery shop, but from one that is several thousand kilometers away. You can keep them forever.

It was found out what is now the manufacturer's fashion. Accordingly, it will most likely be interesting to find out what consumer fashion is at the moment. Potential buyers treat such products with great caution, since the taste of frozen cakes is far from natural.

The cost and taste of such products can in no way be compared with local pastries if there is a pastry shop nearby. Therefore, it makes sense to think about how to draw up a business plan for a confectionery shop.

Possible Challenges a Confectionery Business Owner May Face

One of the fairly common problems in this market is staff turnover. The problem of constant selection and training of future employees in the field of catering can arise for every entrepreneur who plans to open his own business in this market.

The next possible problem is the constant increase in the cost of raw materials. Therefore, a choice may arise: either to raise prices for manufactured products and, accordingly, lose regular customers, or another option is to keep the price low, while switching to cheaper substitutes. However, practice shows that the transition to cheap raw materials can contribute to the loss of customers, and in addition, it will be possible to lose the reputation of the enterprise. The deterioration in the quality of manufactured goods is most often not forgiven by consumers. That is why it would be more expedient to raise prices for products, but at the same time sell goods of the usual quality.

And the last problem, which is quite common in this market, is raw materials of uneven quality. It is quite difficult to get a product of the same quality all the time, especially if there are some interruptions in supply. Accordingly, the owners of this business cannot be completely sure that the same ingredient will always be of the same quality. There are times when the quality can deteriorate at the most inopportune and unexpected moment.

It is worth noting that almost always the product changes its characteristics. Therefore, you will need to change the recipe each time. This problem must be taken into account when opening a business for the manufacture of confectionery.

What do you need to start this business

You should know that such a business is quite profitable, but it requires a large amount of money at the very beginning. It should be understood that we are talking about the amount of 100,000 dollars. It will be needed in order to fully create and establish production, purchase vehicles so that it is possible to deliver manufactured products, and also purchase the necessary raw materials.

The first thing you need is to draw up a detailed business plan for the production of confectionery. This is necessary in order to fully represent the entire mechanics of the process and provide for all the nuances that may arise.

Back to index

Legal costs that will be required

Do not forget that your business will need to be formalized and registered. This can only be done as an LLC (limited liability company). It will not be possible to open an individual entrepreneur (individual entrepreneur), because it will be necessary to attract employees to work. However, the costs of opening an LLC will not be large compared to the costs that will be spent on settling issues with various authorities. Considering that the confectionery shop involves working with various food products and ovens, the room will need to be equipped in accordance with all SES and fire safety standards. In order not to have to redo everything on a new one, it is recommended to call the inspector from the very beginning to clarify all the necessary requirements for the confectionery shop.

However, you should be aware that practice shows that there are still some nuances that need to be resolved additionally. This may cost approximately 1000-2000 dollars.

You will also need to purchase licenses. If it is planned, for example, to hire 5 employees, it will be enough to have only 3 licenses, which will be used alternately. The costs that will be spent on acquiring a basic license along with staff training are about 50,000 rubles per document. Each subsequent one will cost approximately 10,000 rubles.

Back to index

Requirements for the premises that may be suitable for the confectionery business

The next thing is to find a suitable room and rent it. You need to understand that it is not advisable to place such a large production in the city center due to crowding and from a financial point of view. It is much more profitable to locate your workshop in some industrial area or on the outskirts of the city. Renting in such places will cost less, and the fact that the premises will not be in the best shape is not so important, because it is worth noting that repairs still need to be done.

The leased area in the building should be from 200 to 700 square meters. If the choice fell on the option outside the city, the rental price will be approximately 1500-3000 dollars. Prices are given for Moscow.

It is important to know that Rospotrebnazdor sets some of its requirements for premises that can be used for confectionery production:

  1. The maximum possible area of the premises, if it is located in a residential building - 700 square meters.
  2. It is mandatory to have a separate entrance and exit for evacuation.
  3. Raw materials should be supplied only from the ends of the building, while the windows of the building should not go there.
  4. Garbage bins, which are necessary for industrial waste, must be located on the side of the highway and be at least 25 meters from residential buildings.
  5. The amount of water must be such that it is able to fully meet the emerging needs of the workshop. Water must correspond to the quality of the centralized drinking water supply system.
  6. Sewer risers must not be laid in the production room.

Back to index

Selection of the necessary personnel and payment for the work performed

The number of employees that will be needed in the confectionery shop depends on the production volumes that are planned. At first, 5 people may be enough. These will be:

  • baker;
  • 2 assistant bakers;
  • technologist;
  • a driver to be able to deliver products to interested customers and enterprises;
  • if the premises are rented unguarded, you will additionally need to hire several guards (at the same time, it is possible to negotiate with security organizations that provide such services).

Accordingly, at first approximately 3000-4000 dollars will be spent per month to pay for the work performed by employees. However, it is important to warn all personnel that they must strictly adhere to safety regulations. This is necessary in order to avoid problems with various instances in the future.

Purchase of equipment that will be needed in order to open your own workshop

It is worth noting that the entrepreneur will need to spend most of the money on the purchase of the necessary equipment.

A small workshop requires the following equipment:

  • special equipment:
  1. Hearth oven (50,000-70,000 rubles).
  2. Convection oven (200,000 rubles).
  3. A plate for the possibility of making various fillings (40,000 rubles).
  4. Flour sifter (20,000 rubles).
  5. Mixer for liquid dough (30,000 rubles).
  6. Mixer for making creams (18,000 rubles).
  7. Dough mixer (30,000 rubles);
  • Other equipment that you will definitely need to purchase:
  1. Tables, racks and baths (20,000 rubles).
  2. Freezers and refrigerators for storing various ingredients and raw materials (50,000 rubles).
  3. Refrigerator for keeping finished products in it (120,000 rubles).
  4. You will also need baking equipment (approximately 100,000 rubles).

For the production of confectionery products, a large amount of baking equipment is needed. If an entrepreneur does not have a sufficiently large amount of money at the very beginning, it is necessary to think about choosing equipment that is produced in Russia. However, the opinion of the majority of experts in this market is that all confectionery equipment should be imported.

Necessary equipment of the confectionery shop for automation

At this point, everything is extremely simple - this technique is an ordinary PC (personal computer) and related software. At the same time, it is important to know that the number of computers must correspond to the number of employees who must have access to the tasks of the document control program. Usually such workers are accountants, storekeepers, technologists and managers.

It is important to take care of automation if an entrepreneur wants to have modern operational and visual control over all possible types of technological operations performed. These can be actions for the arrival of raw materials at the warehouse of the enterprise and cost estimates for writing off finished products after they have been sold, and so on.

Such stores are characterized by a high level of competition, but, despite this, such entrepreneurial activity is very profitable.

Before the confectionery products begin to be sold, several important steps must be accurately followed, since if even the slightest mistake is made, the business may cease to exist.

Project description

Often a pastry shop looks like a small cafe where you can find delicious pastries and drinks, sit at a table and taste these goodies or buy takeaway products. Such an institution does not involve long gatherings, therefore, a large room is not needed, because the flow of customers is quickly replaced.

The place is only needed to accommodate shop windows and a small number of tables and chairs. For the location of the production workshop, an adjacent room is usually used, the territorial area of \u200b\u200bwhich is somewhat larger.

If placing a mini-bakery and a cafe in the same room is not possible, then they can be located separately, but at the same time, it is necessary to think over the organization of the delivery of finished products to the place of sale - it must preserve both the presentation and taste.

It can also be a simple store that sells confectionery products purchased from third-party organizations.

You can distinguish an institution from the background of the rest with the help of the original name, author's recipes for cakes or specialization in baking (selling) of any one product. For example, the menu may include only puffs with a variety of toppings.

Often, a modern client can only be attracted by something unusual, so you should not get hung up on standard products. Offer the customer something they have never tried before. Anything can be unusual - both the form of baking and the combination of toppings.

You can watch a useful interview with the owner of such a business in the following video:

Market and competition analysis

According to statistics, the sale of food has always been profitable. Confectionery, although not included in the category of essential goods, still sells well. Of course, cakes scare away many buyers with their high prices, but not a single holiday or anniversary is complete without some kind of sweetness on the table.

The main features of the Russian confectionery market are:

  • a short period of sale of products;
  • huge assortment;
  • complete dependence of the manufacturer on the quality of the supplier's raw materials;
  • the tradition of consuming home-made baked goods;
  • a large selection of local raw materials used as a filler (berries, nuts, fruits);
  • tight competition among inexpensive products and low competition in terms of natural, high-quality, expensive goods;
  • quantitative advantage of small business among fresh baked goods.

If you decide to organize such a project, then you should pay attention to the following important points:

  • if you have not yet decided what to produce, then you should take into account that the snack zone is too full, and short-term cream products are in a phase of acute shortage;
  • the presence of a properly selected place and a competent calculation of turnover is something without which the effective operation of a retail outlet is impossible;
  • The quality and popularity of future products depends on the right supplier.

The sale of confectionery products is a rather specific area in which such factors as the cleanliness of the seller and the level of cleanliness in the room itself are of great importance.

Such products contain a lot of sugar, which is very attractive to various insects, the presence of which scares off buyers. Given that the products are perishable products, we can safely say that negligence in relation to cleaning can significantly reduce the profitability of the establishment.

Production plan

A store that has a traditional assortment is best located near the market or children's institution. If there is a supermarket near a suitable place, then it is better to abandon this idea, since a large part of the customers will be lost. Another good accommodation option is housing area. And if you plan to sell exclusive products, then it is better to turn your attention to business and shopping centers, this will allow you to count on ordering branded cakes for any corporate events.

When drawing up a business plan, such an important point as the area should be taken into account. For example, for a store it will be enough 40-50 sq. m. However, if a small cafe area is planned, then you need to take care of the presence of an additional 10-30 squares.

The room must have communications: high-quality cold and hot water, electricity and sewerage. In addition, an effective fire extinguishing and ventilation system must be provided.

If the location of the institution is a residential building, then there must be a separate evacuation entrance and exit. You need to take the goods from the side of the building where there are no windows, and the garbage container should be no closer than 25 m.

The next item of expenditure is the purchase of equipment, since without this the effective operation of the outlet is simply impossible. In the minimum standard set you can find:

  • a rack, which is necessary so that the buyer can view sweets, cookies and other products;
  • refrigeration equipment: a showcase designed for cakes and pastries, an ice cream chest, a chamber for other products, as well as a refrigerator for drinks;
  • showcase, counter;
  • cash machine;
  • computer.

In addition, each employee must have overalls. If we talk about such a format as a cafe-confectionery, then you will also need to purchase the appropriate furniture, dishes and tablecloths.

Financial plan

This section should contain information about what financial investments are needed to open an institution and set up its work.

The expense part consists of costs:

  • on ;
  • to rent or purchase equipment;
  • for the purchase of goods;
  • for the salaries of employees;
  • for advertising.

The size of capital investments is also influenced by the population size. So, if we talk about a multi-million city, then 1 sq. m. of the area of the future store will cost an average at 60 thousand rubles., and if about a small town with a population of 300-400 thousand people, then the amount will immediately decrease significantly - 10-15 thousand rubles.

Opening a small point will cost approximately at 600 thousand rubles., of which 30% is rent, 30% is the purchase of the necessary equipment, 15% is the purchase of products, 15% is the payment of wages, 10% is other expenses.

In general, the cost side of the discovery question depends on:

  • from the location (the numerical composition of the city);
  • from the number of employees;
  • on the format (shop, or shop + cafe);
  • from the rent, transport costs and utility bills.

organizational plan

The implementation of the project initially assumes the presence of reliable suppliers of goods. An average of 300-400 thousand rubles is spent monthly on the purchase of products. The optimal range includes the following:

  • several types of bakery products - at least 10 types;
  • pies and cakes - at least 20 types;
  • gingerbread, waffles and cookies - at least 20 types;
  • cakes - at least 10 types;
  • jam, jam, honey - at least 5 varieties;
  • sweets and marmalade - at least 40 types;
  • chocolate - at least 20 items;
  • several related products - chewing gum, lollipops, etc.;
  • tea, coffee and a range of other drinks.

The initial assortment range should include at least 60 items. The most important thing is to ensure that the presented product has a high level of quality and is fresh. It is necessary to conclude contracts only with reliable, long-established suppliers.

When drawing up a business plan, the minimum required number of personnel should also be taken into account. Opening a store is impossible without 2 salespeople, cleaning lady and accountant(may be part-time). Among the main requirements for the seller, one can single out cleanliness, neatness and the ability to quickly choose for the client exactly what he wants. Taking into account that peak sales are observed during the holidays, it is advisable to decide on the exit of an additional seller during such a period.

Launch Schedule

The main stages of opening can be visualized in the following table:

2 Registration as an individual entrepreneurApril 2016
3 Renting or buying suitable premisesApril 2016

Marketing plan and advertising

Every entrepreneur who decides to start selling confectionery products should be aware that buyers will not go to him immediately after the official opening. It takes time and some effort to promote the institution.

  • Distribution of flyers, containing information about promotions in honor of the opening, about the duration of their validity and how to get to the outlet. Leaflets should be handed out near the store, near the nearest metro stations or other transport stops, but no further than 500 meters from the establishment.
  • Present. It can even be a symbolic candy or chocolate - the buyer will be pleased.
  • Guerrilla Marketing. The principle is extremely simple: a specially hired person walks the nearby streets and asks passers-by if they know about the newly opened store. In this case, you need to pronounce the full name and the main product - the potential buyer will remember this information involuntarily.

When the work of the institution is in full swing, you can leave a well-designed sign and periodic advertising in the media (Internet, local newspapers and TV).

Risk Analysis

This section can be called the most important, because, as you know, "forewarned is forearmed."

Risks are usually associated with:

  • with an unstable supply of raw materials;
  • with unstable demand;
  • with wear and tear of equipment;
  • with an unstable political situation (strike, war);
  • with natural disasters (earthquake, flood, etc.).

There may also be a risk for one of the following reasons:

  • the sales market has not been sufficiently studied;
  • competitors were underestimated;
  • the demand for the product has fallen sharply.

You can reduce them by:

  • detailed market research;
  • minimizing contacts with unknown suppliers;
  • analysis of financial and economic activities;
  • property insurance.

The production of bakery products and sweets is an excellent investment for investors, despite the fact that there is fierce competition in this market segment. If you correctly draw up a business plan for a pastry shop and apply original ideas for baking cakes and pastries, then an initial amount of $ 400,000 is enough to open a business from scratch. Already in the first months, the profit will reach 30%.

Opening a confectionery can mean both the arrangement of a cafe, which operates a production line of cakes and cookies, and a bakery with a store. Let's consider both options.

How to open a cafe-confectionery?

To achieve the best result, the business plan of the patisserie should contain the main concept. As a rule, this is a public catering establishment where parents and their children, old friends and girlfriends come to have a cup of coffee and taste delicious pastries, cakes or pies.

Therefore, a cafe-confectionery should not be located in a large room. 30-40 square meters will be enough. m. Furnishings and interior design must comply with the purpose of the institution. Comfort, homemade cakes, drinks and hospitable staff will attract visitors.

Each pastry shop has its own signature dessert or drink recipe. When opening a cafe, you need to learn the intricacies of confectionery and master one or two dishes that will be served only here.

When compiling a business plan for a patisserie cafe, you should consider buying sweets to take home and making cakes to order. For these purposes, you can organize a small rack or counter for trade.

Location

For a small cafe, you will need tables and chairs for 20-30 people. It does not make sense to make a large hall, otherwise the cafeteria will turn into an ordinary dining room.

Cafe-bakeries can be opened even in sleeping areas. If you open an institution early in the morning, no doubt, residents of nearby houses will reach out for fresh bread or pies for breakfast. Türkiye is a good example. Local bakeries open at 6 am. Already by this time in the confectionery you can buy hot pastries and bread. Naturally, it is not easy to get up at 3 am every day, but it is not for nothing that Turkish confectioners are among the wealthiest people in the country.

It is most profitable to open a pastry shop near schools, universities, office and shopping centers. An additional plus will be an open space for a summer cafe. In the heat, eating stuffy cakes, drinking hot coffee, is not very pleasant.

As a rule, confectioneries are subject to strict supervision by the Rospotrebnadzor, in other words, sanitary and epidemiological stations. Confectionery premises must meet the following conditions:

  • ventilation, plumbing and toilets;
  • fire safety equipment.

These circumstances must also be taken into account and items on the costs of their implementation must be included in the business plan.

Equipment and staff for a cafe-bakery

The purchase of equipment and kitchen utensils is the most expensive item in a confectionery business plan. Here you can use various tools for business development: lending, leasing or own funds.

For the future bakery you will need:

  • electric stove;
  • dough mixing and molding machines;
  • sifter;
  • dough divider;
  • cabinet for melting dough;
  • rounder;
  • refrigerators.

In addition to the above equipment, it is necessary to purchase mixers, packaging machines and coffee machines, computers, furniture for staff, showcases, racks, billboards and a sign.

The specifics of the work of the bakery is such that it is impossible to achieve business development without a high-class baker-confectioner.

The confectioner will need at least one assistant. For the cafe hall, you will need to invite a seller and an administrator.

It makes no sense to hire an accountant and a driver - it is better to use their outsourcing services.

Initial business expenses

In order to open a pastry shop in Moscow with a cafe hall and a small shop, the business plan must include the costs of:

  • rent of premises - 150,000 rubles per month;
  • equipment - 2,000,000 rubles;
  • salaries to employees, including insurance premiums and taxes - 200,000 rubles;
  • repair and arrangement of the premises - 300,000 rubles.

Thus, the minimum starting capital for is 2,650,000 rubles. With an average check of 300 rubles and at least 100 customers per day, the monthly income will be 900,000 per month. Completely confectionery pays off in 1-1.5 years.

How to open a bakery-confectionery?

Before drawing up a business plan for a bakery, you need to decide on the assortment. It is he who is one of the main components of the successful conduct of the confectionery business. Will it be only baking bread (regular or special recipes, for example, from whole grain wheat) or will the bakery produce not only bread, but also muffins, cakes, cakes, muffins and other sweets.

For it is enough to register with the tax office as an individual entrepreneur. There is no need to create an LLC.

Features of opening a bakery

A bakery can be located in any area of \u200b\u200bthe settlement. Placing a bakery together with a store will be a big advantage. Firstly, this will save the businessman from transportation costs, and secondly, the buyer will always be able to buy hot, freshly baked products.

If the store will be located separately from the bakery, it makes sense to consider buying a two- or three-room apartment on the ground floor of a residential building, perhaps on credit. Then the residential premises are transferred to the status of non-residential premises, a separate entrance and appropriate repairs are made in it. Rent 40-50 sq. m will be 50-70 thousand rubles per month. Approximately the same amount will need to be paid on the loan. The benefit is that as a result, the entrepreneur will receive ownership of the premises and will subsequently be relieved of rental costs.

It must be taken into account that the bakery should open early in the morning and close late in the evening. On weekends and holidays, you need to prepare for a large influx of buyers, therefore, increase the number of products.

The bakery will need exactly the same equipment as in the cafe, the only addition is the purchase of a convection oven, special pastry blades and bread pans. The list of other tools is given above.

And in the confectionery store you should additionally purchase:

  • showcases, racks, refrigeration equipment;
  • cash registers;
  • terminals for reading bank cards;
  • telephones, computers with Internet access and programs for them, office equipment.

Typically, confectioneries are equipped with alarms, air conditioning and fire safety systems.

We should not forget that the business plan of the bakery and pastry shop must include activities for advertising, making outdoor signs and window dressing.

2. Description of the industry and company

Confectionery is a rather broad and multicomponent concept. According to Russian GOST, confectionery products are divided into the following groups: chocolate, cocoa, flour confectionery and sugar confectionery. The main feature of the modern confectionery market is the transition from the “privilege” of confectionery products to their mass consumption. Increasingly, confectionery products are becoming fast food, rather than a rare expensive pleasure or gift. In connection with this factor and the fact that confectionery products have a short shelf life and are highly dependent on freshness, the confectionery business has been and remains promising for small businesses. Until recently, the confectionery market has seen steady growth. According to Alto-Group, since 2011 production volumes have increased in all major segments (see Figure 1).

Figure 1. Confectionery production volumes in Russia 2011-2014 (tons)

Source: alto-group.ru

At the end of 2015, experts noted a decrease in production volumes. In general, the market decline, according to the Center for the confectionery market, was about 1%. In particular, according to INFOLine specialists' calculations based on Rosstat data, the production of the largest group in the confectionery production structure - chocolate, cocoa and sugary confectionery products - showed a 2.5% drop compared to the previous year. The reasons for this situation were the weakening of the national currency, the reduction in the income of the population and the decrease in its purchasing power, and as a result, the decrease in the consumption of sweets. At the same time, during the year, imports of all confectionery products to the country decreased by half, and consumer prices increased by an average of 24% (data from the CIIKR). Chocolate (38%) and caramel (33-35%) went up especially strongly. Due to the rise in prices for raw cocoa, manufacturers began to give preference to cheaper recipes, increasing the production of products with fillings and chocolate icing, refusing directly from the chocolate itself. Compared to chocolate, the crisis-resistant direction turned out to be cheaper flour confectionery products.

The purpose of this project is to organize own production and sale of confectionery products in a city with a population of more than 500 thousand people and make a profit. A confectionery shop with a cafe-shop for 20 visitors will be placed in a room with a total area of 100 square meters. The concept of the project will provide for the production of confectionery products according to our own recipes and their sale to consumers in finished form and to order. Since the cafe-shop will be located directly at the production, the consumer will always have the right to count on the purchase of fresh products. The assortment of the confectionery will include flour cakes and pastries with a total assortment of more than 110 types. Due to not the most unfavorable market conditions, the focus will be on inexpensive products and original recipes.

The target audience of the confectionery will be residents of the city, mainly living and working in its central part. The target audience can be described as citizens with an average level of income. The majority of Central Asia is made up of people aged 24-45, that is, the most solvent part of the population. Due to the fact that the confectionery will have small production capacities and turnovers, it is planned to carry out activities within the framework of an IP with a simplified taxation system (“income minus expenses”). The staff of the institution will be 6 people. The total investment costs for opening a confectionery will amount to 1,903,000 rubles. Of these, investments in working capital - 300,000 rubles. More detailed articles of the investment costs of the project are given in Table. 2 business plans.

The main raw materials in the confectionery industry will be flour, eggs, sugar and butter. Milk and dairy products, fruits, berries, nuts, etc. will also be used. In the calculations of this business plan, the average prices for raw materials in Russia as of December 2016 are used.

4. Sales and marketing of the confectionery

The key sales channel at the initial stage of the project will be its own cafe-confectionery at the workshop, in the future it is planned to supply products to grocery stores in the city. The sales plan (see Table 4 of the business plan) is designed for three years of the project. It is planned to reach the planned volumes by the 4th month of work.

As marketing tools to attract the target audience, it is planned to use:

    distribution of leaflets and business cards;

    carrying out promotions with the distribution of finished products.

Since feedback from the client is important for the effective operation of the confectionery, it would be advisable to maintain social networks where photos of confectionery products will be posted, where visitors can leave feedback on different types of products. It is also possible to hold competitions with a drawing of confectionery products or certificates for their purchase. To maintain customer loyalty, it is planned to create branded discount cards. To attract the attention of the audience at the start of work on the opening day of the confectionery, an advertising campaign will be held with a free tasting of confectionery. 40 thousand rubles will be spent on advertising purposes before the opening of the institution.

5. Production plan of the confectionery shop

The confectionery shop with a cafe-shop will be located in the central part of the city, in a room with a total area of 100 square meters. Of these, 55 sq. meters will be a confectionery shop, 40 sq. meters will be occupied by a guest hall, designed for the simultaneous reception of 20 visitors. To accommodate the confectionery, the premises previously used as a cafe will be used, and therefore there is no need to bring the main communications. However, the guest room and the facade of the building will need to be renovated to create a corporate identity for the confectionery. The total cost of repairs will amount to 430 thousand rubles.

The technological process of preparing confectionery products will depend on the specific recipe. In general, it can be divided into 5 main stages: preparation of the product for dough kneading, dough kneading, semi-finished product baking, cream preparation, product design. To equip the confectionery shop, it will be necessary to purchase equipment in the amount of 611,000 rubles. Taking into account equipment for preparing drinks, cash equipment, shop windows and furniture for the guest room, 1,043,000 thousand rubles will be needed. (see Table 5 of the business plan).
