For almost two years we lived in ignorance - what happened to the former lounge cafe "Etazh" in Dobry after the visit of the restaurant business guru Konstantin Ivlev? And why, having received a new name - "Cream", an institution with an already luxury concept and menu, did not work, closing soon? About this and many other things, we were told by the ex-general director of the cafe Arkady Sharov, who was directly involved in the filming of the program “On the Knives” in Vladimir.

I agreed, although the institution was already “killed” on all fronts, even the kitchen was in disrepair. A little later, my acquaintance from the Friday TV channel, who works there as a creative producer, suggested that we star in a culinary reality show. We thought about it and decided - why not? It does not interfere. But, looking ahead, I’ll be honest: then we regretted this decision many times.”

- Why? After all, the program is aimed precisely at raising unprofitable cafes and restaurants. Is not it so?

“Her idea is, indeed, not bad, but the implementation leaves much to be desired. On the screen you see a finished beautiful picture. In fact, everything happens quite differently. The show is a show, what else can I add, it really has little in common with reality. ”

- So it was shooting a kind of feature film?

"Exactly. Our establishment served as an ordinary movie set, with cameras hanging in every corner. The director commanded who and how best to respond to a particular situation. For example: “Make a displeased face”, “Shout!” The waitress Sonata acted strictly according to the instructions. In real life, of course, she did not pester Ivlev. Our conflict with the owner of the premises, Margot, was also blown up to the maximum.

All guests were invited by the employees of the TV channel. Everyone was paid money. One such landing day cost the program 50 thousand, no less, but, apparently, the ratings of the show pay off all these costs. Many scenes have been edited. For example, we never had cockroaches. Yes, and the table that was shown in the frame was clearly not ours, but everything has already been aired. Nothing could be fixed."

Did the repair turn out to be fake too?

“Real, but it’s impossible to make candy out of nothing in a couple of days. They allegedly spent 293,000 rubles on everything about everything, although I don't believe it. “Five days of shooting in a closed cafe brought us more losses than profits. Exhaust was minimal. If we talk about specific amounts, then we lost about 200 thousand rubles, and received about 50 thousand as compensation. And after all, we still had to pay rent somehow.”

- That is, the opinion about Ivlev remained rather negative?

“No, only about the show itself with elements of setup and pretense. Konstantin himself is a true professional. Separately, without cameras, I would gladly call for help in promotion, only the services of this mastodon are painfully expensive.”

“Is it real or not?” Moreover, mostly completely unfamiliar people wrote that I behaved incorrectly. Followers generally defeated the poor Sonata. Many condemned her, and someone openly insulted her. She was so worried about this, she even cried, but we reassured her, because in life Sonata does not behave so cheekily, it was just an invented image.

- Why and when did you decide to close Slivki and open Chaplin in the center?

“Things were going badly. Literally two months after we worked on New Year's holidays, we decided to close the cafe. It's a pity, of course, but what was to be done? Working in the red is also not an option.

He traveled to all the establishments where the famous chef was, so he was so upset that he did not have time to get to us in time, that we had to take a picture with the poor fellow and feed him dishes from Konstantin's menu.

The main thing that I now know firsthand is that keeping an establishment at a decent level is a very difficult task, it requires an excellent concept and, of course, competent PR.”

The program itself positions itself as "non-revizorro". As conceived by the authors, her task is not only to find problems in catering establishments, but also to fix them. However, Konstantin Ivlev, like Olga Romanovskaya, does not like to stand on ceremony: throwing dishes and a mat on camera “chewed” with incomprehensible sounds is in the tradition of the program (it’s not for nothing that the show’s advertising slogan is “It will be sharp”).

In Kazan, TV chefs were attracted by the Bolaq restaurant of national cuisine. In the program, it is presented as a "once successful" institution with a "very kind hostess" Svetlana and staff who "turned the restaurant of national cuisine into a place of squabbles and disputes." The restaurant, more like a bar, is empty, and the owner screams at the camera that the employees are nobody for him and he will sell the establishment. All this takes place in the very center of tourist Kazan. But the "good hostess" invited TV people. Konstantin Ivlev should put everything in order in 3 days. So what wouldn't you do for a good show?

"Chicken coop" in the kitchen: squabbles on camera, humiliation from the presenter, battle chefs, unsanitary conditions

Kazan TV cuisine in the show turned out to be spicy, but varied. From the very first frames of the release, the authors “hung” several conflicts at once, which they developed further: the owner who does not take part in solving the problems of the cafe and the kind suffering hostess, the chef and her deputy, diligent owners and idlers employees, other caring employees and owners, do not wishing to update the interior. Each viewer could choose heroes and anti-heroes according to his taste.

And then came the analysis “by the bones”. Already at the entrance, a gloomy picture appeared: letters that had fallen off, artificial palm trees, the absence of visitors, a boorish bartender. Then chef Ivlev got to the menu: “Restaurant of Tatar cuisine. What the hell is a Caesar salad doing here…” The chef didn’t like the dishes either: incomprehensible tea, soup “like from a canteen” with store-bought noodles, bitter cheese in julienne, bad meat in a barbecue. Criticism of dishes alternated with a demonstrative display of squabbles in the kitchen.

The real show began when Ivlev entered the kitchen-"chicken coop". The presenter immediately announced that the chef preparing such food cannot be a cook and arranged a culinary battle between the Bulak chef and her steak frying assistant, finally humiliating the first - the "culinary devil" who "offended" him with his food. But the boorish style of the TV presenter really liked the sous-chef.

It was not without a check in the style of "Revizorro" either. Ivlev gutted the restaurant’s refrigerator, from which he threw out a “carrot”, frozen minced chicken and another half of the food, poked the hostess into “unsanitary conditions”, which was confirmed by a broken dirty exhaust fan.

Checking by customers: a blockage in the kitchen and the closure of the institution

On the second day, Ivlev arranged for Bulak to be checked by customers, catching up with visitors. This time, the restaurant's kitchen "failed" due to the number of orders, and Ivlev flew in to the already "clucking" deputy chef, who remained in charge and could not cope. The presenter's ranting on the show alternated with a display of customer dissatisfaction: "Tell me it's impossible to eat," a frustrated young man throws a Caesar salad to the waitress.

The apogee of the second day in the kitchen, as in classic tragedies, was the return of the chef deposed the day before. However, it did not become a triumph. The kitchen could not feed even the son of the hostess, who came with friends to eat. The result - the owners came out to the visitors with an apology and closed the establishment.

It took 245 thousand rubles to update the interior

From a Tatar cuisine restaurant to a sports bar: “great” burgers and Ak Bars hockey players testing

The update began with a “cleansing” of the staff: the quarrelsome deputy chef and the boorish bartender who “gasped” while working were fired. Later in the night, Ivlev radically changed the concept: from a Tatar cuisine restaurant to a sports bar. It took 245 thousand rubles to update the interior. For this money, TV people painted the walls, changed the sign, filled the bar with sports paraphernalia and board games. Ivlev also changed the menu, brought a new sous-chef - a man, to dilute the "chicken coop", and put the owners at the bar. The presenter completed the changes with a promotion for Bauman with the distribution of free burgers.

As a result, of course, success: on the street, defiantly for the camera, a queue of people who want to get into the new “unique” sports bar, who, of course, have never been seen in Kazan, is lined up. All customers are happy, they enthusiastically eat great burgers instead of incomprehensible soups and Caesars, and are even ready to sit at the bar just for the sake of the great atmosphere of the place.

True, in the kitchen - again the dressing from Ivlev: “Are you really all ice cream in Kazan? We do everything through…”. Again mat, screaming and blockage in the kitchen. The real test was the invitation of hockey players from Ak Bars. And only thanks to the wonderful teamwork that suddenly developed in the kitchen, everything was managed. And the logical conclusion at the end of the program: "Chief Ivlev saved another hopeless institution!"

The question remains: is it right to convert a restaurant of national cuisine in the tourist center of the city into a standard sports bar?

The establishment definitely received good advertising on TV.

But the question remains: is there life after the show? How long will the owners of the establishment have enough fuse? Will they be able, just like Konstantin Ivlev, to catch up with clients not only for the shooting of the show, but also on ordinary working days? How will the same staff work, first humiliated by the TV presenter, and then, after some two days, exponentially rehabilitated by him? Is it right to convert a restaurant of national cuisine in the tourist center of the city into a standard sports bar? It was not possible to get a quick comment from the owners of the institution, however, just like the owner of Fatima, insulted by the TV crew, the editors of Realnoe Vremya are ready to grant the right to respond.

After the release of the program "On the Knives" on the Friday TV channel, only the lazy did not talk about the Permian restaurant "Deja Vu". Bright characters, Ural flavor, famous dialect and emotionality. Many social media users even believed that all the participants in the program were actors who played their roles professionally.

“Actually, everything happened for real. Emotions, joy, sadness - what we have not experienced. There was a breakdown inside the team, but after that we only became stronger. We have guys with a lot of ideas. I'm not going to change the team," says the director Alexandra Andronova.

According to her, with the release of the program, the flow of guests has actually doubled. Permians began to come not only to eat, evaluate the quality of service and see what the masters of the capital have done, but sometimes just take pictures with the project participants.

39 year old Lyubov Ponosova in the team affectionately called Lyubasha. It was she who had a hard time with the scandal during the filming with the host of the program, the chef Konstantin Ivlev and burst into tears, wanted to leave work, but later changed her mind and returned. Now the Perm woman remembers everything that happened as a good lesson and is not offended by the Moscow culinary specialist.

“He spoke to the point. A little embarrassing, but true. We didn’t make it,” she throws up her hands.

Cook on the ship

Lyubov was born in Krasnokamsk, studied in the small village of Konets Bor. Since childhood, she dreamed of becoming a chef. The first dish she cooked at the age of nine was borscht. Having seen enough of her parents in the kitchen, she decided to repeat after them - without any recipe and knowledge. It turned out very tasty, the woman smiles.

Then, having moved to the regional capital, she entered the coca at the river school, where the main emphasis was on teaching cooking on water vessels, taking into account various features, including the structure of the kitchen and compliance with sanitary rules. And at the age of 18, she went on a cargo ship carrying coal, timber and salt as a cook.

About the TV show

The Knives Out project is a culinary reality show based on the popular Kitchen Nightmares format. The famous chef Konstantin Ivlev travels to the cities of Russia in order to find the most hopelessly unprofitable establishments in order to turn them into a profitable business.

“The only moment in such voyages is work in the men's team. But I didn’t feel any mockery from the outside, on the contrary, the atmosphere was like at home! I fed a team of nine men with porridge, salads, meatballs and whites, and everyone was happy, ”she notes.

Two years later, the Perm woman decided to "go ashore". She got a job as a cook at the Yubileiny restaurant in Zakamsk. Later, having changed a couple of establishments, she met Alexandra Andronova (at that time she was working as a waitress - ed.), who later called Lyubasha to the Deja Vu restaurant.

"On knives"

The filming of the show "On the Knives" took place within a week (it took three days to remake the cafe and train the chefs for a new menu - ed.), and the whole team was constantly in suspense, which, as the employees say, was quite difficult to hide. The Perm woman complains that because of this, she lost her nerve in the end, and the only way she was able to throw out all the emotions that had accumulated during this time. The confusion with the dishes and the scandals in the kitchen - everything happened out of surprise, Lyubasha makes a helpless gesture.

“Before the show, everything was calm here. During the day, the "distribution" line worked, on weekends - funny discos and show programs. Of course, we did not expect such pressure. It’s not very pleasant when they shout at you, plus a crowd of people with cameras walks nearby and films what is happening, ”the cook sighs.

Behind the scenes, passions immediately subsided - the restaurant staff - cooks, waiters, bartenders - encouraged each other and tried to help. After Lyubov failed in the kitchen, the Moscow chef decided to use her talent in the “show kitchen” format (cooking in an open area next to the seats for guests - ed.) and, as it turned out, did not lose. A Perm woman happily cooks pastries for guests - from shanezhek to homemade pies.

“Recently, a company of several men aged 30-35 came and asked about Lyubasha and her famous pies. True, they did not find her, but they promised to come back soon, ”says the restaurant administrator.

Now Lyubasha lives in the village of Overyata, where she became a real star. Every day on the way to work, she is recognized in public transport and on the street. The chef takes such fame calmly and is always happy to talk to people and receive compliments for a well-prepared dish. However, the main connoisseurs of her culinary master, she considers, of course, her relatives - her husband, two sons and a daughter.
